Ingredients for vegan chili
- 1 onion
- 1/2 cup chopped red bell pepper
- 1 cup diced celery
- 2 chopped jalapeno peppers
- 2 carrots
- 6 tomatoes
- 2 cup can pinto beans, rinsed and drained
- 2 cups vegetable stock or water
- 1 teaspoon minced garlic
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 2 bay leaf
- salt and pepper to taste
Pour the olive oil in a pot over medium heat then add chopped onion and saute for about 5 minutes until the onions are tender.
Add minced garlic and saute for 2 minutes.
Chop the tomatoes and place them in the pot. cook the tomatoes for about 10 minutes.
Pour the tomato mixture in a blender and pulse it 2 to 3 times to puree the mixture. then pour the puree in the pot again.
Add the chopped vegetable (celery, jalapeno peppers, red bell pepper and carrot)
Pour in the vegetable stock and stir well, then add the chili powder and bay leafs. Bring the mixture to a boil lower the heat and let it simmer for 1 hour until all vegetables are tender and cooked.
Now add the can pinto beans, salt and pepper to the mixture.
Let the chili simmer for 30 to 45 minutes more until cooked and thickened as desire.
Now your healthy vegan chili is ready to enjoy.
