Grilled Chimichurri Chicken Skewers
Chicken kebabs are amazing foods and are cooked almost the same way but marinated with different ingredients. In this recipe, I teach you to make a sauce with chopped vegetables that we use during and after cooking the kebab and marinate the chickens with this green delicious sauce.
Cut the chicken into 5-centimeter cubes. Chop the vegetables and zucchinis into round pieces.
Mince fresh parsley and Coriander leaves inside the food processor.
Add two tablespoons of olive oil, one tablespoon of lemon juice, minced garlic or garlic powder, some salt, and pepper, and mix them well.
Add two-thirds of the chimichurri sauce with salt and pepper to the chicken and mix them completely. Cover the chicken with cellophane and keep them inside the fridge for at least one hour until the chicken is marinated.
Take the chicken out of the fridge, skewer them with sweet peppers and grill them. If you are using the oven, heat it at 200C.
The grilled chimichurri chicken skewers are ready. Pour the rest of the sauce on the kebab and serve with the cooked rice and enjoy.
Tips and tricks
- It is better not to keep this sauce inside the refrigerator for too long but if you made too much of it you can freeze the rest of the sauce and use it later. Leave the sauce out of the fridge at room temperature to unfreeze it and don't use heat.
