Directions

Preheat the oven on broiler to toast the English muffins. Pour about 3 inches water in a saucepan and bring the water to a gentle simmer. Add the vinegar to help the eggs firm faster. Carefully break the eggs into simmering water and let them cook for 2 to 3 minutes.

Meanwhile heat and fry the bacon.

Split the muffins and toast them in the preheated oven. Spread toasted muffins with butter.

When the eggs are firm but the yolks are still soft in center remove them from hot water.

Place the eggs on a paper towel to drain their water.

Now every thing is ready so place the hot fried bacon on the buttered muffin and then add the poached egg.

Top the egg with 1 tablespoons warm homemade Hollandaise sauce and then decorate with chopped chives.
