Quick Vegetable Soup Recipe

Here is an quick and easy recipe of a vegetable soup with some quick-cooking oats that make this tasty soup creamy and more delicious…

  • 1 cup quick-cooking oat
  • 8 cups vegetable stock
  • 3 cups chopped mushroom
  • 1 cup diced carrot
  • 1/2 cup chopped parsley
  • 2 cups milk optional
  • 1 tablespoon butter
  • salt and pepper to taste

Directions

First pour the vegetable stock in a pot over medium heat and add the quick-cooking oat too.

Bring it to a boil and simmer for 10 minutes until the oats are tender and cooked.

Meanwhile, place chopped mushroom in a pan over medium heat and add the butter and some salt.

Cook the mushrooms until tender.

Now use a hand blender and puree the oat mixture.

Then add the diced carrot.

Add the cooked mushrooms too and simmer for about 15 minutes until the carrots are tender and cooked. You can add the milk now but I like this soup more creamy and thick so I didn’t add the milk.

Then add the chopped parsley and simmer for more 5 minutes.

Now your creamy delicious soup is ready to enjoy…
