Fereni (Persian Kheer) Recipe


 Ferny is one of those foods that does not know time or place. It is delicious and hearty at any time of the year, any season, and any situation. In this article, I will explain how to prepare Kheer with very suitable proportions, so that you can make as much excellent Kheer as you want and enjoy it.


  •  Milk: 1 cup
  • Rice flour: 1 tbsp.
  • Sugar: 2 tbsp.
  • Rose water: 1/2 cup
  • Saffron if desired: a little bit
  • Vanilla if desired: one drop


First mix all the ingredients except the rose water. Mix it thoroughly so that the rice flour dissolves completely in the Kheer. Use good quality rice flour that is not darken in color and has a good aroma.

Brew a very small amount of saffron beforehand and pour it into the Kheer to get a beautiful golden color. This step is completely optional.

Put the Kheer on the heat and gently stir until you see bubbles.

Stirring the Kheer while it is on the heat is very important because the rice flour is heavy so it will settle on the bottom of the pot.

Add the rose water when the Kheer is thick and a little heavy. If you want, add vanilla at the same time.

Cook on a gentle heat until the rice flour disolve completely and the Kheer becomes smooth. Then pour it into the bowls while it is hot. Garnish it with cinnamon and roses.

Important points for preparing excellent and delicious Kheer

 Sweetness amount is very suitable, but if you like less sweetness, you can reduce its sugar.

Be sure to dissolve the rice flour in cold milk. If the milk is hot, the Kheer will be pelleted and spoiled.

The quality of rice flour has a direct effect on the aroma, color and taste of Kheer.

During the preparation of the Kheer, while it is on the heat, it should be stirred very slowly and continuously so that it does not become lumpy.

use cinnamon, roses, sliced ​​pistachios and almonds or whatever you like to decorate.
