Ingredients for vanilla pastry cream
- 3 cups whole milk
- 1/2 cup white sugar
- 1/8 teaspoon vanilla powder
- 1/4 teaspoon salt
- 1/2 cup corn starch
- 4 egg yolks
- 2 tablespoons butter
- 1/3 cup heavy cream
Pour 2, 1/2 cups of the milk in a saucepan over medium heat, add the sugar, salt and the vanilla powder. simmer and stir until the sugar dissolves.
Meanwhile stir the remaining milk, egg yolks and corn starch in a bowl until smooth.
Pour about 1 cup of the hot milk mixture into the egg yolks mixture little by little and whisk continuously to temper the yolks mixture and make the yolks thin. This will keeps the yolks from turning to scrambled eggs when you add them to the hot simmering milk.
Pour the yolks mixture into the remaining simmering milk and stir continuously with a whisk.
Keep stirring with a whisk until the mixture thickens.
Add the butter and heavy cream, stir until blended.
Pour the pastry cream in a bowl and top with a plastic rap which touches the surface of the pastry cream to prevent developing a tough skin on top of the pastry cream. Let it cool in room temperature and then put it in the refrigerator.
