Some days, you just want something a little lighter and fresher as a meal, this salad is made for these days. It’s loaded with spinach, celery, romaine lettuce and spicy shrimps. This delicious shrimp salad also can be a great side dish salad too….
ingredients for shrimp and spinach salad
- 150 g raw and shelled shrimp
- 2 cups fresh spinach
- 3 cups romaine lettuce
- 3 sticks celery
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon red pepper
- 1 teaspoon paprika powder
- 1/2 teaspoon minced garlic
- 1 tablespoon Balsamic vinegar
- 2 tablespoons olive oil
- salt to taste
Add lemon juice, paprika, red pepper and 1/4 table spoon minced garlic into a ball, stir to combine.
Add the shrimps and allow to marinate for 15 minutes.
Meanwhile, chop the vegetables.
To make the salad dressing add vinegar, olive oil, 1/4 teaspoon minced garlic and some salt to taste, stir to combine.
Place the vegetables in a bowl and stir in the sauce. let them sit for 5 minute while you cook the shrimps.
Add 1/2 table spoon oil in a skillet over medium heat, then add the shrimps.
Cook the shrimps for about 5 minutes.
Place the vegetable salad in your serving plate.
Add your cooked shrimps, decorate with some cherry tomatoes and enjoy.
