ingredients for pumpkin soup
- 2 tablespoons olive oil
- 5 cups chicken broth
- 2 onions
- 3 cups pumpkin puree
- 2 tablespoons all-purpose flour
- salt and pepper to taste

directions
Chop the onions and place them in a saucepan over medium heat add the olive oil too.

Saute the onions for 4 to 5 minutes until tender then add the flour.

Stir to combine and saute for 2 to 3 minutes.

Now pour in 1 cup of chicken broth and stir until combine.

Then add the remaining chicken broth and increase the heat to medium high until the mixture reach a boil.

Now add the pumpkin puree. You can use can pumpkin puree or homemade one.

Stir until combine then simmer the mixture for 15 minutes.

Now use a hand blender to puree the soup.

Then simmer for 10 to 15 minutes until the soup thickened.
