One of the reason that I LOVE fall, is the delicious desserts of this awesome season, and one of the most lovable desserts for me is pumpkin pie, and here I,m going to share a simple recipe of a velvety delicious filling and a flaky crust pumpkin pie with you that even people who don’t like it change their minds with this one.
ingredients for pumpkin pie
- 2 cups pumpkin puree, can or homemade
- 1 cup sweetened condensed milk
- 2 eggs
- 1 egg yolk
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- unbaked pie crust
First preheat the oven to 400 F. Now in a large bowl beat the egg yolk and the whole eggs with a electric beater until smooth and foamy.
Add the pumpkin puree, sweetened condensed milk, cinnamon and salt in the bowl.
mix well until blended. Now the pie filling is ready.
This amount of filling are enough for one (9 inch) pie crust or some smaller pieces . I’ve used 5 (3 inch) and 1 (7 inch) pie molds and place the smaller homemade pie crust in them.
pure the mixture into the crust.
Bake the pie in the preheated oven for 15 minutes, then reduce the oven temperature to 350 F and continue baking for about 30 minutes or until the knife inserted in the pie comes out clean.
