Ingredients for spinach with garbanzo beans
- 8 ounce fresh spinach
- 1/2 cup garbanzo beans
- 2 table spoons olive oil
- 1 onion
- 2 teaspoons minced garlic
- 1/4 teaspoon cumin
- salt and pepper to taste
Put the garbanzo beans in a bowl, cover with cold water and let soak overnight. Then drain and rinse the beans, put them in a pot over high heat and pour in enough water. Cook the beans until they are tender.
Drain the cooked beans.
Pour the olive oil in a skillet over medium heat, add the chopped onion and cook until tender then add minced garlic and saute 2 minutes more.
Add chopped spinach and cumin stir and cook for 5 minutes.
Add the cooked garbanzo beans and season with salt and pepper.
Saute for about 2 minutes.
Now your delicious meal is ready to enjoy…
