Ingredients for avocado pasta
- 7 ounces pasta noodles
- 1/4 cup bell pepper (yellow or orange)
- 1 cup cherry tomato
- 1 ripe avocado
- 1/2 cup fresh basil
- 1 tablespoon olive oil
- 2 cloves garlic
- 1 tablespoon fresh lemon juice
- salt to taste
Pour water in a large pot over medium heat and bring it to a boil then add your noodles and a little salt, cook the pasta noodles for about 8 to 10 minutes or until tender but still firm.
Meanwhile, chop the cherry tomatoes and bell pepper.
Then Place the fresh basil, garlic cloves, olive oil, fresh lemon juice and enough salt in a food processor.
When the pasta is cooked and ready to drain peel and chop the avocado.
Place the avocado in food processor too and pulse several times until smooth and creamy, set the avocado sauce aside.
Drain the noodles and place them in a large bowl. Add chopped tomatoes, bell pepper and avocado sauce.
