Ingredients

300 grams All-purpose flour
225 grams Unsalted butter
60 milliliters Ice water
1 medium Egg (for the eggwash)
10 grams Butter
36 grams Sugar powder
3 grams Salt

Instructions:

First, you need to cut the butter into small cubs and put it in the freezer.

Mix the flour with sugar and salt in a food processor, then add the butter and mix them well.

Pulse every 3 seconds 15 times. We don't want our dough to become warm by our food processor.

Add ice water very slowly to the mixture and pulse every 3 seconds. In this step, our dough might look crumbly. Put the dough on a piece of parchment paper and press it with your hands. Make sure the warmth of your hands doesn't warm your dough.

Cover the dough in cellophane like the picture and let it rest in the fridge for half an hour.

After half an hour, take the dough out of the fridge. Sprinkle some flour on your Rolling pin and working surface. Roll out the dough to a 30cm circle with a thickness of 5 millimeters. Make sure the dough hasn't stuck to the surface. Add more flour if needed. Put your dish on the dough, the dough should be 2/5 cm bigger than your dish.

Press the dough to the bottom and the walls of your dish. Be careful not to make the dough thinner or scratch it. Cut the dough with a knife or scissors. The dough should be one centimeter bigger than your dish. Shape the edges with your fingers from the inside by pressing the dough.

Put the dough inside the fridge for 20 minutes or 5 minutes in the freezer. Cover the dough with some parchment paper.

Put some foil on the parchment paper and fill it with beans. Preheat the oven at 200C and bake your crust for 15 to 20 minutes, then take it out and remove the foil and the parchment paper.

Mix the egg and butter well and cover the crust with them. Cover the edges with foil and put it inside the oven at 200C for 15 more minutes to become golden.

  • The butter needs to be very cold.
  • If you don't have a food processor you have to knee your dough quickly to prevent warming the dough with the warmth of your hands.
  • If you have an electric oven you can heat it at 180 to 190C.
  • The egg wash is completely optional and could be omitted.
