Ingredients

450 gram Cream cheese or mascarpone
200 gram Cream
3 large Egg
120 gram Powdered sugar or granulated sugar
25 gram White flour
1 tsp Vanilla extract
1 tsp Salt

Instructions:

First, preheat the oven to 350°F or 175°C

Mix the cream cheese and cream with a hand mixer until they are mixed. Instead of cream cheese, you can also use mascarpone, which I will explain in the tips section.

Add powdered sugar or granulated sugar with vanilla extract and stir.

Then add the eggs and continue stirring.

Sift the flour and add to the container and then stir well.

Mix the ingredients thoroughly until you get a smooth and concentrated texture.

Take a 20cm diameter cake mold, grease the bottom and the wall. Cut a piece of greaseproof paper, and cover all inside the mold with it.

Then pour the cake batter into the mold and place in the preheated oven for 45 minutes. the oven temperature is 347 Fahrenheit.

The cheesecake puffs up a lot, but after you take it out of the oven, it slowly puffs down. That's normal, so don't worry; that's the way it should be. Be aware that the cheesecake must not be shaky when you take the mold out of the oven. If it is not stable and it shakes, it means that it is not baked yet. The picture shows how the cheesecake should look after you take it out of the oven. After the cheesecake's temperature drops, put it in the refrigerator for two hours, and then it is ready to be served.

You can serve it simple or garnish it with seasonal fruits. I had some strawberries that I pureed and put on the stove with two tablespoons of powdered sugar to evaporate. When it got cold, I used to garnish it.

Tips and tricks

  • Make sure that all ingredients have reached room temperature.
  • You can add all 450 grams of cream cheese. Or use half the amount of cream cheese and half the amount of mascarpone. But if you use mascarpone or any other cheese that doesn't have salt, don't forget to add about one teaspoon of salt to your ingredients.
  • My oven is electric, and I put the mold in the oven set at 320 Fahrenheit degree for 50 minutes. If in 40 to 50 minutes, depending on the oven's heat, you see that your cheesecake turned golden, that's good. But if it wasn't golden, turn on the top grill for a minute. And be sure not to burn it because it changes color very quickly.
  • If you cover the mold with the greaseproof paper carelessly, the wall of your cheesecake won't be smooth and beautiful, and the batter will stick to it, so be careful.
