Ingredients

200 gram digestive biscuits
200 gram cream cheese
0.5 cup sugar
200 gram heavy cream
100 gram unsalted butter
1.5 tbsp gelatin powder
1 tsp vanilla extract

Instructions:

1

First, we are going to prepare the ingredients for making this yummy cheesecake. Take the butter out of your fridge so that it reaches room temperature.

2

Place the digestive biscuits in a food processor, or inside a ziplock and crush them using a rolling pin. Then add in the room temperature butter which should have already softened up by now. Now start mixing and stirring really well.

3

Pour the biscuit and butter mixture onto a cake pan, then press hard against it with a spoon or the bottom of a cup to make sure all the bits and pieces are sticking together. Now place the pan inside the fridge for around 1 hour so that the crust starts to set.

4

Mix the cream cheese with sugar first. Then add cream and vanilla, thoroughly stir using a mixer until you get a consistent mixture.

5

Mix the gelatin powder with one cup of water using the bain-marie technique until it's all dissolved in. Then give it some time to cool down and start adding the cheese ingredients and make sure to stir well.

6

Take the pan out of the fridge, spread the cheese mixture over the crust surface, and flatten it all out by pressing your spoon. Then place and leave the pan inside the fridge for around 3 hours. Don't rush this stage as it's crucial to let the cheesecake set and form itself.

7

It's finally time to take your pan out of the fridge! This is the exciting part where you get to have fun decorating your cake using various fruits or colorful jello and take it to the next level. Hope you enjoy your no-bake cheesecake. Bon appetite!

Tips and tricks

  • It's best to use springform pans for this cheesecake but no worries if you don't have one. Instead, you can use any dish that has the same diameter throughout its whole height. Also, use a baking sheet for the bottom of the dish to avoid sticking.

Background & History

Cheesecakes are one of the oldest and most loved desserts in the world that seem to have originated from Ancient Greece. They can be made using the oven, or no-bake style with just your refrigerator. I prefer the refrigerator style as it is hassle-free and also allows me to add any kinds of fruits or jello every time I make it.
