Olivier salad is a traditional salad dish in Russian cuisine which is also popular in other countries like Iran or many european countries but with some change in recipe.
Overall the all ingredients of this salad are healthy and tasty as well and by some minor change you can stabilize the calories in your diet .
The dish is rich in high fiber (green peas) , high protein ( chicken and egg ) , carbohydrate (potato) and healthy fat so by cooking the olivier salad you can have a perfect dish.
Also this type of salad is a good recommendation to cook for parties or friendly time and also can be as a nice starter.
- 3 medium potatoes
- 3 eggs
- 1 chicken breast
- 1 onion
- 300 gr pickles
- 2 medium carrots
- 200 gr green peas
- Some Chicken stock
- Mayonnaise sauce
First of all put the chicken breast in a pot with an onion chopped , salt and pepper with some water over medium heat and be careful to leave a little chicken stock at the bottom of the pot for ingredients of sauce or if you do not like it you can omit it.
Second step is to cook the green peas if you do not use the conserved type .Then cook the eggs and potatoes together , and cook the carrots separately.
Third step when all ingredients are ready and cooked : mash eggs and potatoes ( or you can grate them) , shaved or chopped chicken , grate cooked carrots and grate the pickles. Mix all thoroughly.
Fourth step for making the sauce : a little chicken stock , mayonnaise sauce ( or creamy yoghurt ) , sour lemon juice and a little salt ( in my opinion it is better to test the tase before adding the salt ) ; combine all together and add it to the salad
Mix the salad with sauce then put in the refrigerator to be cold and get all the tastes together.
I recommend if you like to decorate it , first pour it in your dish and then add a little sauce spread it evenly with the back of a spoon so that it has a more uniform and regular color.
If you want to make it as a healthy meal so it is better to omit the mayonnaise and make the sauce only with some olive oil , joghurt , lemon juice and a little black pepper.
it is better to eat by whole grain bread or seprately , even make a sandwitch with some extra pickles 😉
