Rice and Vegetables with Salomon’s Fish – Sabzi Polo ba Mahi

rice and vegetables called(sabzi polo)with fish, is one of the old and genuine iranian foods wich gather everyone by the table and eating it together would feel so good.
sabzi polo normally serves with whitefish but salmon is another fish that tastes as delicious and nutritious as whitefish
and it tastes really great with rice and vegetables
in this post, I put this food’s recipe and I hope you like it

ingredients

  • 3 pieces of salmon’s fish weighted 500 grams
  • 2 cups of raw rice
  • 1 cup of chopped rice and vegetables included(coriander, leek, dill, parsley and a little bit of fenugreek
  • 2 dessertspoons of chopped garlic
  • salt,pepper tumeric as much as you need

first,you cut the salmon’s fish skin.
you can do it easily with a sharp knife it will get removed way too easier if the fish is freezed and stiff. and you can saute your fish without removing the skin but without skin, it will look way better and more delicious.

after removing the skin, you dop the fishes with salt,pepper and tumeric together and then, leave it for some minutes.

while we are savoring our fish, we prepare our rice for brewing. for brewing, first you should pour oil in pot then put baked potato’s rings in it.

now your rice is brewer with water so we mix it with vegetables and garlic. I myself usually do this level for about 2 steps. it means in this level, i mix half of the materials because in this case materials mix well and every part of our rice get green and the same and rices will not break when you stir them

using garlic is optional if you don’t like the smell, remove it!
now we put rice in a pot and for brewing better, we add some holes on the rice and put a little butter on the rice cause it makes it amazing!
at the end, we pour half the glass of water around the pot just to brew it better.
while rice is brewing, we cook our fish usually fishes take 30 minutes for baking. so it’s better to step up our time so that rice and fish prepare the same time.
for baking fish, first we pour oil in the pot and put the fire on. when the oil got hot, we put fish in the pot and bake it with medium temperature just in case we make our environment clean.
after 15 or 20 minutes.

the fish are almost cooked and one side of them are fried and golden! so we turn around the fish to the other side to saute.

when fishes baked, first we put them in a kleenex to remove the extra oil and then, your dish is ready!
