Brussels Pasta Recipe

Brussels pasta is one of my favorite light lunch options. Brussels, spinach and cherry tomato are such a natural combination. This pasta is so refreshing, don’t you think so??? Try it once and I’m sure you’re gonna LOVE it…

Ingredients for Brussels pasta

  • 8 ounces pasta noodles
  • 2 cups Brussels
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1/2 cup Parmesan cheese
  • 2 cups fresh spinach
  • 3 tablespoons olive oil
  • salt to taste

Directions

Pour enough water in a large pot over medium heat and bring it to a boil then add your noodles and a little salt, cook the pasta noodles for about 8 to 10 minutes or until tender but still firm.

Cut the Brussels into half.

Pour water in another pot over medium heat and bring it to a boil then add Brussels, cook them for about 2 to 3 minutes or until tender.

Drain the cooked Brussels.

Place the spinach, garlic, Parmesan cheese and olive oil into a food processor.

Add some salt too then pulse several times until smooth and creamy.

Drain the pasta noodles and place them in a skillet over medium heat, add the spinach mixture, stir to combine.

Add cooked Brussels and cherry tomato too, saute the mixture for 4 to 5 minutes.

Now your delicious pasta is ready to enjoy.
